Kevin McHale's post moves, especially the up and under.
Tim Hardaway's crossover.
Tim Duncan' turnaround bank shot.
Bird's shot.
Shaq's brutality.
Dream Shake.
Sky Hook.
Erving's gravity-defying layups.

Kareem's sky hook and Shaq's drop step are the most unstoppable, IMO.

What a surprise, two moves by low-post players. =/
To me it's gotta be MJ's fadeaway, or MJ's crossover fade. (shades of 1998 Utah)

It's easier if you shoot it from the middle of the floor (ie. in front of the rim) because you have a good sense of where the rim is (and if you overshoot it, you have the backboard), but really tough on the baseline or on angles. I don't think anyone can realize the full value of the shot until you practice the move and start posting up bigger/taller guys who can't do anything about it (and then if you get a turnaround to counter the move, it's even more difficult).

Also, Lebron in the open court with a full head of steam is pretty much as unguardable as anything in today's game.
